I would recommend that you talk to your admissions counselor about that, but as far as I know the chemistry and pre-professional tracks are sufficient preparation for pharmacy school.

To answer both of your questions, Notre Dame doesn't require or expect a certain number of AP classes or subject tests, so I would recommend that you take as many as you can handle and do well in. ND would rather see you make good grades and scores in 3 AP classes than struggle in 5.
